Ingredients


  • Four cucumbers (diced)
  • Four tomatoes (diced)
  • 1/4 cup red onion (thinly sliced)
  • One avocado (cored and diced)
  • Two TBs olive oil
  • Two tbs red wine vinegar
  • One tbs Italian seasoning
  • 1/4 tbs sea salt
  • 1/4 tbs pepper
  • One tbs Parsley (chopped)

Instructions


  • First, cut off both heads of the cucumbers. Then slice into 1/4" thick slices lightly on the diagonal. Add to the large pot.
  • Then Next cut the tomatoes in half, then cut each half lengthwise into three wedges. Then cut each wedge in half crosswise. Transfer to the bowl with the cucumbers.
  • Slices the avocado in half along and remove the pit by rotating the halves smoothly. Next, separate the peel, next slice it into 1" thick slices, and add to tomatoes and cucumbers.
  • Place the tomatoes, cucumbers, avocado, and red onion in a large pot.
  • In a small pot, whisk together the olive oil, red wine vinegar, Italian seasoning, sea salt, pepper, and chopped parsley.
  • Pour the dressing above the vegetables and toss. Taste the salad, and if required, then add more salt and pepper.

Note: 

Cucumber and tomato salad will remain refrigerated for 3-4 days, covered with a tight plastic coat. Don't leave it at room temperature for longer than two hours to avoid extreme moisture.
