THAI CUCUMBER SALAD RECIPE

Thai Cucumber Salad is a refreshing, delicious, and vibrant in flavor. It's the ideal summer side recipe or companion to any Asian inspired snack.

THAI CUCUMBER SALAD

INGREDIENTS

DRESSING


  • 1/3 cup rice vinegar 
  • 2 Tablespoon granulated sugar 
  • 1/2 teaspoon toasted sesame oil
  • 1/2 teaspoon salt 
  • 1/2 to 1/4 teaspoon red pepper flakes 

SALAD


  • Three green onions 
  • Two large cucumbers
  • 1/4 cup chopped peanuts (optional)

INSTRUCTIONS


  • In a small pot, mix the rice vinegar, sesame oil, sugar, salt, and red pepper flakes. Place the dressing away to give it time to blend.
  • Peel and slice the cucumber applying your favorite style (below the recipe I show my technique). Place the sliced cucumbers in a big pot.
  • Chop the peanuts into shorter pieces if you want. Slice the green onions.
  • Add the dressing green onions and peanuts on to the sliced cucumbers. Move to combine. Serve quickly or chill until able to eat. 

Note :

Carry the salad a short stir before serving to redistribute the dressing and flavorings.

How to peel cucumber :

You need to wash your cucumbers. It is tempting not to clean vegetables when they reach home, but it is essential to identify that they are unclean. If you purchased them from the supermarket store, you have no idea how numerous people had touched them before you took them home. So always practice vegetable hygiene.

Peeling cucumbers is something super easy to do, and you can do it with a knife, but doing with a vegetable peeler, it is more comfortable. If you uncover the cucumber with a knife, be very mindful not to mistake and cut yourself.

Peel and slice a couple of large cucumbers. I prefer to remove strips of the peel to create a striped cooling effect once they're sliced. You can slice the cucumber lengthwise(If you don't like cucumber seeds) before slicing into rings and use a spoon to separate the seeds from the center.
